Lilly Pilly and White Chocolate Muffins

SERVING SIZE:

Recipe will make 6 – 12 muffins depending on the size tray you use.

Ingredients

  • 3 cups of self – raising flour (sifted)
  • 1 cup of caster sugar 
  • 125g white chocolate chips
  • 100ml Olive Oil
  • 1 egg
  • 1 cup milk
  • ½ cup cream
  • 1 tsp vanilla essence 
  • 200g Lilly Pilly flower
  • 4 – 6 fresh Lilly Pilly flowers for decoration

Method

  1. Sift flour, then add the dry ingredients.
  2. Melt butter, add all the ingredients, except for the Lilly Pillies, and mix well
  3. Add Lilly Pill Compote Mixture and gently fold into the mixture, be careful not to overmix 
  4. Spoon mixture into a tray lined with cupcake liners
  5. Decorate with the fresh Lilly Pilly flowers
  6. Bake at 200°C for 22 – 25 minutes

*Lilly Pilly Compote Method*

  1. Remove seeds 
  2. Add ¼  cup water
  3. ⅛ cup of sugar
  4. Bring to boil and stir frequently until berries are soft and mixture is a thick consistency
