Early Harvest

   

Viva Early Harvest Extra Virgin Olive Oil has been specially harvested at an early stage of maturity so as to capture the full fruity flavours. The olives are delivered and processed within 24 to 36 hours after harvesting to guarantee oil quality. Using the latest two phase system that uses less water in the process therefore retaining more of the polyphenols (anti oxidants), vitamins and minerals. The process of extraction is carried out using very low temperatures (< 35° Celsius) this term is widely known as first cold press or with modern machinery first cold processed. Once the oil has been extracted it is settled and stored in temperature controlled stainless steel tanks. The tanks have been specially designed to expel oxygen to maximise quality, freshness and prolong shelf life. Viva Early Harvest has wonderful grassy aromas, full fruity flavours with a balanced complex peppery moderate bitter finish.

Serving suggestions: superb in salads, vegetables or Mediterranean and pasta dishes.

Late Harvest

   

Viva Late Harvest Extra Virgin Olive Oil is particularly harvested at the later stages of maturity to produce a mild oil with delicate flavours. The olives are delivered and processed within 24 to 36 hours after harvesting to guarantee oil quality. Using the latest two phase system that uses less water in the process therefore retaining more of the polyphenols (anti oxidants), vitamins and minerals. The process of extraction is carried out using very low temperatures (< 35° Celsius) this term is widely known as first cold press or with modern machinery first cold processed. The late harvest oil has been specifically produced and blended to be used in general cooking so to not dominate your food.
